Use these outdoor BBQ tips and cook up a storm during your nature retreat:

1.      Make Sure the Outdoor Grill Is Hot

A hot grill will give the meat a wonderful sear on the outside and keep it tender and juicy in the middle. It will also prevent the meat from sticking to the grill and kill bacteria. If your grill has a lid, keep it closed when you are heating it, so it heats up quickly to the desired temperature. This can take 10 to 15 minutes.

Here is a simple grill heating guide that can help:

●        Low heat – Between 250 and 300°F.

●        Medium heat – Between 300 and 350°F.

●        Medium high heat – Between 350 and 400°F.

●        High heat – 400 and 450°F.

2.      Get a Meat Thermometer

Unless you are an experienced chef who can judge the temperature of cooked meat with a touch, it can be difficult to determine the exact temperature. A quick check with a meat thermometer will do the trick.

If you forget to buy the meat thermometer, you can do a simple touch test instead. It is rare if the meat feels like the flesh between your thumb and index finger. If it feels like your cheek, it is medium rare, and if it doesn't dip underneath your finger, it's well done.

3.      Don’t Cook on High Heat

If you are barbecuing meat with bones, don't over-char it to cook it through. It will only cover it with inedible thick char. Cook thick meat on high heat to get a crust on the outside, and move it to lower, indirect heat on the grill. This will allow the meat to cook slowly, preventing it from getting dry and chewy.

4.      Let the Meat Rest before Removing It from the Grill

Don’t remove the cooked meat from the grill as soon as it is done. Let it rest for 5 to 15 minutes before slicing into it and serving.

A large steak will need more time to settle in its juices than a smaller one. By resting the meat, you allow the juices to penetrate, which makes it tender. Place the cooked meat in tinfoil to retain heat as it rests.
